The name Volcán de mi Tierra recalls the volcanic eruption over 200,000 years ago, which created perfect soil conditions for the cultivation of blue agave. The premium tequila, which is made from 100 percent of that very same blue agave, is handcrafted by the Gallardo family, which has deep roots in Mexico. Together with Moët Hennessy, the best of two worlds is united here: the expertise of tequila production according to traditional and modern methods with the perfection and constant striving of Moët Hennessy to break new ground.
Two contrasting terroirs in one bottle
Highlands and Lowlands are terms more commonly associated with Scotch whisky than tequila. This tequila, however, could break up the two conceptualizations! On the one hand, there is the highland called “Los Altos de Jalisco“: there, at over 2,000 meters above sea level, a high concentration of iron oxide in the soil produces soft, fruity floral notes. This is contrasted by the lowlands called “Los Walles” at an altitude of 1,200 meters above sea level. Here, a soil of volcanic rock provides mineral, spicy and tart notes.
A volcano becomes a tequila – tradition meets modernity
The processing of the agaves for Volcán Tequila is done differently in the two terroirs. The agave hearts from the lowlands are processed traditionally. They cook for 36 hours in a brick oven and are crushed with a volcanic stone wheel. The blue agave from the highlands, on the other hand, goes through a more modern production cycle: the process of pressure cooking in the autoclave, an oversized pressure cooker, takes nine hours, and the so-called “piñas,” or agave hearts, are crushed in a modern multi-stage mill.
On the one hand tradition, on the other modernity – this also applies to the subsequent fermentation. Part of the Lowland agaves ferments in wooden barrels with natural yeasts derived from the agave leaves, the other part in stainless steel with champagne yeasts. The Highland agaves undergo their fermentation – with rum yeast – also in stainless steel tanks.
In the subsequent distillation process, on the other hand, there is no difference: The distillate flows out of a stainless steel still during the first distillation, while the second distillation takes place batchwise in copper. Everything is made in the company’s own distillery, where only this tequila is produced – a unique feature in Mexico. All Volcán Tequilas therefore also bear the seal of the “Appellation of Origin Tequila (NOM)”. Finally, these three different distillates are carefully blended together to produce Volcán de mi Tierra Blanco.
The taste eruption of the volcano
Sweet agave notes harmonize with a touch of grapefruit and black pepper in this tequila. The second quality from Volcán is the Volcán de mi Tierra Añejo Cristalino. Cristalino is an increasingly popular method of removing color from tequila aged in American white oak through chill filtration. This preserves complex and softer aged notes, while still resembling a fresh Blanco in color. For its Cristalino, Volcán blends “Añejo” with “Extra Añejo” from the Lowlands that matured between one to over three years. A convincing Tequila Cristalino with strong flavors of caramel, tobacco and dark chocolate.
