A rare delicacy from the far north is making its impressive debut at PURS New Nordic Japanese Cuisine: Head Chef Peter Fridén is showcasing Kalix Löjrom, an exclusive caviar from Sweden, which until now has been scarcely seen in Germany’s fine dining scene — and is turning it into the centerpiece of a unique culinary experience.
The vibrant orange roe of the small vendace, caught in the icy waters of the Gulf of Bothnia, has long been celebrated in Sweden. As the country’s first caviar to receive Protected Designation of Origin (PDO) status, Kalix Löjrom stands for artisanal excellence and pure, unspoiled quality — values that also define Fridén’s cuisine.
