Pinus Nigra – this is the Latin name of the black pine. Why are we mentioning it here? Because there is a particularly majestic one in the Seegut Zeppelin landscape park, which lends its name to the restaurant located there. A restaurant that is accorded just as much respect as the tree that has stood here for a long time.
Over a hundred years, to be precise. Because back when Gustav Gminder built his villa for his summer holiday, he planted exotic trees as well as local fruit and vegetables. And today, this legacy is carried on by Seegut Zeppelin in general and Restaurant Pinus in particular. Careful use of resources takes centre stage. In some places, that sounds like a cliché. Here it is lived reality.
Slow Food
With this in mind, the Pinus restaurant emphasises the resources provided by the landscape park itself and the surrounding area. Meat is not the focus here. And if it is, then the animals must come from the region and be able to be processed as a whole. Incidentally, the restaurant works closely with Speiserei im Maier, a business run by the Fennels, as well as Seegut Zeppelin.
Garden kitchen
The Pinus restaurant therefore specialises in vegetarian dishes. The team led by chef Philipp Heid sources the ingredients from its own grounds. Fruit trees, shrubs, flower beds and greenhouses serve as sources, as do wild plants. Rose hips, green walnuts, sorrel, ground ivy, yellow raspberries, acorns that are processed into flour for pastries, lemongrass or coffee balm: the spectrum ranges from wild to cultivated and local to exotic.
Sharing is caring
On the plates, this variety of colours and aromas is then combined in the most exciting ways and assigned to specific flavours. Colour codes on the menu at Restaurant Pinus‘ indicate whether a dish tastes particularly sour, earthy, floral or lactic. It comes as no surprise that the dishes here are not organised in the classic sequence trilogy, as everything is designed to be shared – in the spirit of mindful togetherness.
